Advice on new build

If you plan to Oc'ed the 5000+ BE is better choice, since you not overclocking the 6000+ will do fine.  I think your setup is ready to roll. 

The stock heatsink will be good enough if you not Oc'ed.

8800GT SLI just output about 325watts under load, so you won't have power shortage problem with a 750watts psu.  PCP&cooling 750watts or the 610watts would be great choice if you want to exchange for an extra bucks.
